Review: Market (TV Diner) - Taking its regal place within the W Boston hotel in the core of the city's theatre district, Market is the sleek creation of acclaimed Executive Chef Jean-Georges Vongerichten, whose imaginative styling of classic dishes is known on an international scale. With its contemporary, elegant décor and sultry lighting, this sophisticated eatery radiates opulence, but does the cuisine shine as brightly? To Market we went to find out. We begin with the butternut squash soup, a bowl of velvety rich amber broth, dotted with mushrooms and chives - an absolute triumph both in flavor and presentation. Four nicely sautéed sea scallops with amazing caramelized cauliflower suffered from the occasional residue of sand. Redemption came in the form of a piquant caper-raisin emulsion that enveloped the scallops, adding a bright and tangy dimension. Our entrees awaited and we contentedly tucked into a hearty pork chop with pistachio pesto and more of that enchanting caramelized cauliflower. The meat might have benefited from a bit more seasoning, but overall this was a substantial plate of success. On to the Georges Bank haddock with parsnip puree, mint and coconut juice. Cooked to a translucent turn, the delicate fish was transformed into a taste sensation by the eclectic trio of vegetable, herb and fruit. An individual passion fruit soufflé was a light and airy luxury with its crusty crown and lush center. And the green apple crisp with cinnamon ice cream was a pleasing upscale twist on a down home standard. Served in a petite cast iron kettle, this delightful dessert proved to be a winning marriage of creamy and crunchy textures. Our server was courteous and knowledgeable, delivering our courses at a timely but not rushed pace. We will say that Market is in the "special night out" category with appetizers from $8 to $17, entrees running the range from a $14 cheeseburger to a $32 strip steak and desserts at $8. For its refined feel, cut-above cuisine and attention to detail, Market will earn a glowing Gold Plate.
