Cookin' with Costa: Italian Shrimp

Get Chef Jameson's Italian Shrimp recipe at: www.necn.com/tvdiner/recipes Chef Jameson Mello Allora Ristorante Marlboro, MA Recipe: Italian Shrimp Servings: 1 Ingredients: 6 white shrimp 1 tsp capers 2 anchovies Small pinch of chili flakes 6 chopped Kalamata olives Splash white wine 1 cup red sauce 1 Tbsp olive oil 1 tsp chopped garlic 2 turns of fresh pepper Directions: In a large sauté pan over medium heat, melt the anchovy with the chili flake in the oil Add shrimp, garlic, and olives and sauté for 30 seconds Add white wine and reduce, scraping up any bits from the bottom of the pan Add red sauce and capers. Reduce heat to simmer and cook, stirring for one minute Remove from heat and toss with fresh basil and pepper Arrange shrimp, tails up on a rectangle plate and finish with a drizzle of extra virgin olive oil
